FASTFIT RECIPE OF THE WEEK: SUGAR -FREE OATMEAL COOKIES

INGREDIENTS

1 cup uncooked oats
1/3 cup Stevia (sweeten as desired)
1 cup raisins or other small pieces of dried fruit
6 ounces pureed plums
1/4 cup egg substitute
1 tablespoon honey
1 teaspoon cinnamon
1 teaspoon vanilla extract


DIRECTIONS
1. Preheat oven to 350 degrees.
2.  Combine all ingredients in a large bowl and mix well.
3.  Drop by large spoonfuls onto a baking sheet sprayed with nonstick cooking spray.
4.  Bake for 12-15 minutes or until browned. Cookies are "cake-like" and don't spread much so they can be placed close together.

Makes approx. 2 dozen
Serving Size: 2 cookies
