FASTFIT RECIPE OF THE WEEK: MUSHROOM NUT ROAST


So with Thanksgiving coming up, what about if your Vegetarian??
Try this delectable dish:

INGREDIENTS
1 lb portabella mushrooms
3 cloves garlic
4 carrots (shredded)
1 cup cashews (chopped)
6 slices of wheat bread (cubed)
1/4 cup egg beaters
1 tbs Olive oil
1 large yellow onion (chopped)
1 tsp basil
1 tsp tyme

DIRECTIONS
1. Saute onions and garlic in a skillet with olive oil for about 5 minutes
2. Add cashews and continue to saute for another two minutes
3. Mix bread crumbs, carrots, egg beaters, Saute mixture and seasonings in a large bowl
4. Spray with Pam no-stick spray and fill it with the mixture to about 1/2 inch from the top
5. Preheat oven to 350
6. Cover pan with foil and bake for 45 minutes
7. Remove from foil and bake for another 15 minutes to allow top of roast to crisp.
